Finding Sanity during Summer Break
As a stay at home mom, summers are a double edge sword.
On one hand, they are full of the joy of having no schedule, late nights swimming, day trips to county fairs, the beach and playdates.
On the other hand, it means months of hearing “i’m bored, I want a snack, i’m bored, i’m bored, i’m bored”.
I have found that having friends over for dinner or a BBQ in the backyard is an easy way to balance the sanity of summer break.

Grilled Cedar Plank Salmon
The star of the show is this Applewood with Orange & Ginger Cedar Planked Atlantic Salmon.
The Cedar Bay Grilling Company is a locally operated company found off the shores of Nova Scotia. They provide award winning, high quality Atlantic Salmon.
Their cedar plank salmon comes prepared on top of a beautiful cedar plank. Full of flavor in one of their popular rubs – Sugar & Spice or Applewood with Orange & Ginger. I happily tried both and they are amazing!
Their products can be purchased at Kroger, Publix, Hannaford, Safeway, Albertsons, Fred Meyer, Ralph’s, Giant, Giant Eagle, Stop n’ Shop and Roche Bros.

Not only is the flavor phenomenal, they are easy to prepare. Simply thaw and then cook directly on the cedar plank in either the oven, smoker or grill for about 18-20 minutes.
Each time I have prepared these grilled cedar plank salmon, I presented it right on the cedar plank and the results are crowd pleasing! Plus less mess…not going to argue with that.
DIY Salmon Bowls
Rather than serving this recipe assembled, I created more of a Do It Yourself Salmon Bowl set up.
I placed an array of fresh veggies and toppings out, alongside the stunning Applewood Orange & Ginger Cedar Plank Salmon and had friends create their own Grilled Salmon Cedar Plank Bowls.
It was perfect because most the prep I was able to complete in advance and my friends could customize their own lunch.
You can use any vegetables and toppings you can think of. To create my Salmon Bowls, I used the following –
- spiralized cucumber
- shredded carrots
- thinly sliced bell peppers
- green onions
- sesame seeds
- red pepper flakes
- sesame & Vinegar Dressing
- Grilled Applewood Orange & Ginger Cedar Plank Salmon
