Avocado toast is nothing new but recently motivated to save money and create my own at home with some fresh fruit and smoked salmon. It’s a fiber filled, balanced snack that works any time of day.

I love avocado toast. It’s so simple and only requires a few ingredients. While at a restaurant recently, I was blown away that they were charging $14 for a single slice. It definitely motivated me to start making it myself at home.

Creating a Balanced Meal with Avocado Toast
To create a more balanced and filling dish, I added a few things to my avocado toast plate. There’s nothing wrong with the original version but sometimes you want something a little heartier to keep you full.
It started with some fresh fruit. I added some sliced grapefruit segments and a kiwi. Both fruits but the different colors offer different vitamins and nutrients. The green kiwi is high in vitamin c, fiber and antioxidants. The grapefruit is a source of beta-carotene which our body converts into Vitamin A.
I also added a little bit of smoked salmon, which is a fatty fish that’s a great source of protein and omega 3 fatty acids. I seasoned it with olive oil and everything but the bagel seasoning blend.

Avocado Toast and Fruit Plate Recipe
You can easily switch up the ingredients to make it your own. Change the fruit based on what’s in season or what you like. Looking to add even more fiber, use whole wheat bread.
Avocado Toast and Fruit Plate
Ingredients
- 1 slice toast
- 1/2 avocado
- 1 pinch red pepper flakes
- 1 tsp lemon juice
- salt, to taste
- 2 oz smoked salmon
- 1 kiwi, sliced in half
- 1/4 cup grapefruit sections
- 1 drizzle extra virgin olive oil
- 1/2 tsp everything but the bagel seasoning blend
Instructions
- Spread your avocado over your slice of toast. Season with lemon juice, red pepper, and salt.
- Place on plate with sliced kiwi and grapefruit sections. Drizzle smoked salmon with a bit of olive oil and add everting but the bagel seasoning blend.
