Easy Baked Salmon Recipe
When looking at our seafood / fish archives, we realized that there are only a few salmon recipes on the site. This was surprising because we probably enjoy salmon about once a week. We realize we’ve been salmon sharing slackers!

To remedy our salmon sharing shame, we put this baked salmon recipe on the top of our list. It’s a favorite at our house because it’s simple, delicious, and only uses a few ingredients.
Healthy Ingredients for Healthy Meals
Our favorite type of recipes are ones that don’t require a laundry list of hard to find ingredients. We try to use real ingredients, to make real food that our families will enjoy. This salmon recipe checks all of of recipe boxes –
- Only uses 5 ingredients – olive oil, salmon, 100% pineapple juice, garlic, parsley, pepper

Helpful Tips for this Baked Salmon Recipe
If you are new to cooking with fish, we shared some helpful tips in a previous post. One of the reasons we love this recipe is that it’s pretty simple and all cooks in a single dish.
A few tips for making this baked salmon recipe taste great –
- Marinade the fish in the pineapple juice and herb mixture for at least 20 minutes. It really helps the fish soak up all the flavors and keeps it moist during baking.
- Since this dish is baked, we prefer to remove the skin before cooking since it isn’t getting crispy in the oven. However, you can cook it with the skin on but we recommend just eating around the skin once cooked (it’s really easy since the fish comes out really flaky and falls off the skin easily)
- You can tell when the salmon is done cooking by taking a fork and trying to flake off a piece near the center. If it flakes easily, you can take it out.
- Make sure you are using 100% pineapple juice to avoid any added sugars
Serving Suggestions
To make this a well balanced meal, here are a few meal suggestion ideas –
- Serve with some couscous, quinoa or wild rice
- Make sure to add some veggies like a big, leafy green salad, roasted bell peppers, asparagus, green beans, etc.
- Save leftovers and serve the next morning with an egg for a delicious breakfast
Baked Salmon with Pineapple, Garlic and Herbs
Ingredients
- 1 tbsp extra virgin olive oil
- 2 filets (3-4 oz each) salmon
- 1/2 cup 100% pineapple juice
- 2 cloves garlic, minced
- 1 tbsp dried parsley
- 1/2 tsp black pepper
Instructions
- Drizzle the bottom of a baking dish with the olive oil
- Place the salmon filets on top of the olive oil
- Pour the 100% pineapple juice over the salmon and top with the minced garlic and dried parsley
- Cover and let marinade for 20 minutes
- Preheat oven to 425 degrees F
- After 20 minutes, uncover and place the fish in the oven for about 12-15 minutes, until cooked through and fish easily flakes with a fork
- Let cool slightly before enjoying
