Easter is this weekend, which means that in addition consuming way too many jelly beans, I will also have a ton of hard boiled eggs leftover.

I love letting my kids color the eggs but then come Monday, those pretty pastel eggs just stare at me from the fridge begging to be put to good use.

Curry Egg Salad Recipe

I love a good egg salad. It’s just so classic and comforting.

I wanted to take classic egg salad and update it a little bit. So, I swapped out greek yogurt for mayonnaise and added curry powder to kick it up a bit.

The end result – a creamy egg salad with a bit of a mediterranean kick.

Ingredients

  • 6 eggs, hardboiled shells removed, eggs chopped
  • 3 stalks celery diced
  • 1 cup greek yogurt, plain
  • 2-3 tbsp curry powder
  • salt and pepper to taste
  • 1 tsp paprika
  • 1 tbsp fresh chives chopped

Instructions

  • Place the chopped hardboiled eggs and diced celery in a large bowl
  • In a small bowl, combine the greek yogurt and curry powder. Mix until well combined
  • Add the curry greek yogurt mixture to the large bowl with the eggs and celery
  • Stir to combine well, taste and season with salt and pepper as needed
  • Add paprika and garnish with chopped chives
