Delicious Summer Salad with Dill Dressing

Inspired by a salad from a local restaurant, this delicious, summer salad is packed full of flavor and texture and topped with dill dressing

This summer salad with dill is packed with bright, fresh flavors and extra crunch. Butter lettuce is combined with quick pickled cucumbers, crunchy pistachios, peppery radish, hard boiled egg and an amazing dill dressing. A show stopping dish that will have you going back for seconds.


Recipe Inspiration

There is a local restaurant where I live that serves an amazing Little Gem Lettuce Salad with a goat cheese dressing. It’s creamy, zesty and chock full of great ingredients.

After enjoying this dish multiple times, I went home and created this version. I had to replace a few ingredients with other since I couldn’t find little gem lettuce. I also changed the dressing to a simpler one to make. That’s what I love about using recipes for inspiration…making them your own.

Summer Salad with All the Fixings

This summer salad has so many great ingredients. It may seem like a long list, but trust me it’s worth it.

Butter Lettuce – instead of little gem lettuce, I used butter lettuce. It’s soft and buttery and so delicious in this salad. I found little, pre-washed leaves but you could use whichever lettuce you prefer.

Quick Pickled Cucumber – I love cucumber and quickly pickling it gives it a unique, vinegar flavor. It pairs really well with the dressing and provides a crispier texture.

Radishes – I realize radishes aren’t for everyone but I love the peppery flavor they provide. Thinly slices them makes it so they aren’t overpowering.

Hard-boiled Egg – not only does the egg provide some protein but it adds a bit of heartiness to the salad. The soft, creamy texture pairs so well with the zesty dill dressing.

Pistachio – the original salad had marcona almonds but I couldn’t find any so I used pistachios. The salty nuts give this salad a great crunch, along with a bit of fiber.

Goat Cheese – the perfect tang to top off this salad, a bit of crumbled goat cheese works perfectly. You could also add feta instead of goat cheese.

Perhaps my favorite part of this salad though is this Creamy Dill Yogurt Dressing. Made with a Greek yogurt base, it’s packed with garlic and fresh dill.

Ingredients

Quick Pickled Ingredients

  • 1 cucumber, cut into ribbons
  • 1/4 cup rice wine vinegar
  • 1 tsp sugar
  • 1 pinch salt

Salad Ingredients

  • 3 cups Butter Lettuce, torn into medium pieces
  • 3 hardboiled eggs, cut in half
  • 3 radishes, thinly sliced
  • 2 tbsp pistachio pieces
  • 2 oz goat cheese
  • 1/2 cup Dill Yogurt Dressing (see link below)
  • Optional Garnish – fresh dill

Instructions

Quick Pickled Cucumber

  • Add the cucumber ribbons to a bowl or jar. Add the vinegar, sugar and salt and stir to combine. Set aside while you construct the rest of the salad

Salad

  • On a large platter or bowl, start with torn butter lettuce pieces and add 1/2 the dill yogurt dressing. Toss lettuce well to combine dressing
  • Top with sliced radish, hardboiled egg slices and pickled cucumber ribbons
  • Sprinkle with pistachios and goat cheese. Top with fresh dill if desired
  • Drizzle with remaining dill yogurt dressing
