This was the question I asked on social media two weeks ago. I went out the garden and was overwhelmed with the number of jalapeño peppers growing!
Dan always plants 2-3 pepper plants and this year they just exploded. I think we pick about 100 peppers a week. That is definitely too many jalapeños for one household.
Especially when someone in the family doesn’t like spicy food…me! I can’t handle spicy food and sometimes just the smell of spicy food alone makes my eyes water.
So I asked my “friends” on social media what they would do with a surplus of jalapeño peppers. The top responses were –
- Pickle them
- Make stuffed jalapeño poppers
- Give them away
Dan makes jalapeño poppers about once a week and we typically do a huge gifting of peppers to various neighbors every couple weeks. We have bags full of peppers in our freezer, so I decided pickling them would be the best bet.

I tried a few different pickling recipes I found online but wasn’t thrilled with the end result.
Then I stumbled across this Easy Homemade Pickled Jalapeños recipe from Simply Scratch. They turned out so good! And the recipe could not have been easier.
Now I just need to go out and get more glass jars!
