It’s no secret that we love summer meals. It’s the combination of fresh produce, eating outside on a warm summer evening and enjoying meals at a slower, summer pace that we love most.
This recipe features a perfect, summer meal idea. Our guidelines for a great summer recipe include –

- Nothing too heavy or filling
It’s also a great meal to whip up when it’s warm outside and you just don’t feel like cranking on the oven or standing over a hot stove.

Tequila Lime Grilled Shrimp
This recipe starts with the most flavor packed, grilled shrimp. We started with uncooked, peeled and deveined shrimp and then simply marinated them in an easy combination of fresh lime juice, a splash of tequila (it gets cooked off when you grill the shrimp), jalapeño, fresh herbs and a touch of honey.
To keep it easier to grill, we threaded the shrimp on wooden skewers. This makes it much easier to turn them all to grill each side. You could also sauté the shrimp or place directly on the grill (without a skewer). They cook quickly, so it only requires a few minutes on each side.
For a full “no cook” option, you could use precooked shrimp and just serve it cold on the tostada and skip the grilling. If you are using precooked shrimp, we recommend skipping the tequila in the marinade recipe. It won’t get cooked off and the shrimp will taste great with the remaining ingredients.
Fresh Watermelon Jicama Salsa
The star of this recipe is hand’s down the Fresh Watermelon Jicama Salsa from Sam’s Fresh Salsa. It’s bright, fresh and made without artificial ingredients. It made the perfect addition to this grilled shrimp recipe. We added it to each tostada but be sure to serve more alongside the dish because it’s just so good!

Grilled Shrimp Tostadas
This has become one of our favorite, easy, weeknight meals to enjoy in the backyard. It’s simple but so flavorful thanks to the marinated shrimp and Watermelon Jicama Salsa. You can easily customize the ingredients to include your favorites. The recipe calls for guacamole, red onion, and cilantro as toppings but some other suggestions include –
- shredded lettuce
- black or refried beans
- cotija cheese or queso fresco
Grilled Shrimp Tostadas with Watermelon Jicama Salsa
Ingredients
Tequila Lime Shrimp
- 1 lb shrimp (raw, peeled, deveined)
- 2 tbsp extra virgin olive oil
- 2 tbsp tequila
- 1 lime zest and juice
- 1 tsp honey
- 1/2 jalapeno, diced and seeds removed
- 2 tbsp cilantro, chopped
For the Tostadas
- 6 tostadas
- 1 cup guacamole
- 1/4 red onion, diced
- 1/3 cup Sam's Fresh Watermelon Jicama Salsa
- Optional Garnish – additional fresh cilantro, chopped
Instructions
- In a large bowl, combine the shrimp, olive oil, tequila, zest and juice of 1 lime, honey, jalapeno and 2 tbsp of chopped cilantro
- Mix well to combine and allow shrimp to marinade for 20-30 minutes for best flavor
- Once ready, thread shrimp onto wooden skewers. Place on heated grill for 3-4 minutes on each side. Remove and set asdie to cool slightly
- To make each tostada, place guacamole on each tostada chip and then top with diced red onion, grilled shrimp, and Sam's Fresh Watermelon Jicama Salsa. Garnish with additional chopped cilantro (if desired) and enjoy!
Serving Suggestions
