I don’t know when May became such a jam packed month, but it is testing every ounce of patience that I have.
Our school year is ending earlier than usual this year due to a district wide calendar change. On top of that both kids have playoffs for baseball and softball. Tack on all the end of the school year field trips, spirit days, projects and assignments…you have yourself a crazy month.
This recipe has saved my sanity multiple times. It’s an easy dinner recipe that hits the spot every single time. Ladies and gentlemen, may I present the Hot Honey Chicken Bowl.
The Beauty of the Hot Honey Chicken Bowl

This dinner comes together quick, uses simple ingredients and makes great leftovers. The whole family loved it!
This meal in a bowl has it all – protein (ground chicken), veggies (broccoli, carrots, scallions) and carbohydrates (rice). It’s all topped with a sauce that is so good I could drink it straight.
It can also be easily customized. Don’t like broccoli…add in a veggie you do like. Ground chicken not your jam…use your favorite protein in its place. Don’t have any avocado…no problem, just skip it.
Wine Pairing Suggestion

In addition to creating recipes, I also am the social media manager for a local winery where I live called Omega Road Winery. I asked them for a recommendation on a wine pairing that would go great with this meal. They did not disappoint with the recommendation.
They suggested their Torrontés, which is a bright and light white wine that pairs well with dishes using a bit of heat and spice. Since this dish contains red pepper flakes, zesty ginger and a hint of hot honey the wine really complimented the dish perfectly.
