If you ask my daughter to help you in the kitchen, she will literally drop anything she is doing and run to help.

It really shouldn’t come as a surprise to me, since her all time favorite show is The Pioneer Woman on Food Network (she’s 5 years old by the way).

She’s at the age now where she actually has the ability to help make meals, instead of just playing around with bowls and spoons. Measuring out dry ingredients like flour or sugar is typically her responsibility and lately we’ve been slowly graduating to egg cracking. We’ve got a ways to go before that skill is perfected, but she loves to try.

Teaching Family Recipes

The theme for this month’s The Recipe Redux post was to share a healthy recipe that you cooked as a child or that you are cooking with your kids now.

The first thought that came to my mind was my Oma’s German Spaetzle recipe. However, I think she’s still little young for that one since it involves standing over a pot of boiling hot water.

I can remember my mom making this Italian Chicken Bake for us often while were growing up. I have no idea where she originally got the recipe but I love that all my sisters and I still make it our own homes and that we each make it a little differently.

Simple Ingredients

One of the best parts of this recipe is that most the ingredient come from canned vegetables. This not only makes it something you can whip up with pantry staples, but it’s very budget friendly and you can make it any time of year.

This also makes it a great dish to have your little ones help you make. After opening and removing the lids to the canned tomatoes, artichoke hearts and olives, all your little helper has to do is pour them over the chicken.

Everything cooks in a single dish, making clean up even easier.

Now that I think about it, this dish has it all – easy ingredients, budget friendly, family friendly and all cooks in a single dish. Booyah!

Italian Chicken Bake Recipe

This is my version of the recipe my mom used to make. She always added red onion, but my kids think onions are spicy so I omit them. I typically serve this chicken with a huge green salad on the side. The tomatoes and juice left over in the pan after cooking can also serve as a great sauce for pasta.

Ingredients

  • 4 chicken breasts
  • 1 can diced tomatoes do not drain
  • 1 can artichoke hearts drained
  • 1/2 can black olives drained
  • 1 tbsp Italian seasoning
  • salt and pepper

Instructions

  • Preheat oven to 375 degrees F
  • In a baking dish, lay the chicken breast in the bottom in a single layer
  • Sprinkle chicken with Italian seasoning and season lightly with salt and pepper
  • Pour can of diced tomatoes over the top of the chicken
  • Add the artichoke hearts and olives
  • Place entire dish in the center rack in the oven for 25-30 minutes, until chicken is fully cooked
  • Allow to cool slightly and serve
