This summer inspired recipe combines two of our favorites – Greek Salad and Salmon. We are no strangers to sharing our love of Greek Salad…it’s a year round staple in our house.

To create this easy, Mediterranean diet recipe we simply took the basics of the Greek Salad, placed it on a bed of butter lettuce, added some creamy avocado and topped it all off with a delicious Air Fryer Salmon.
The end result – a filling summer salad. It’s packed with vegetables, heart healthy fats from salmon and avocado, and an olive oil based dressing.
Quick and simple but oh so delicious.
Air Fryer Salmon Recipe
Once we discovered that yes, you can cook salmon in the air fryer, we’ve never looked back. It’s simple, easy and clean up is a breeze.
We used our fantastic Wild Alaskan Salmon from our monthly Sitka Salmon Shares box for this recipe.
What is Sitka Salmon Shares?
In a nutshell, Sitka Salmon Shares is a members based organization where you sign up to purchase your “share” of a monthly seafood harvest from one of their independent, small boat, family fishermen.
Similar to a produce boxes you can order through a local CSA, the Sitka Salmon Shares program is membership into a CSF = Community Supported Fishery. You enroll at 3-9 month intervals (although you can cancel anytime) for one of the various seafood box options available online. Each monthly “share” is specific to what the fishermen’s wild Alaskan catch contains (approximately 4.5-5 lbs of seafood) and what time of year it is.
Once a month, your Sitka Salmon Shares box will arrive on your doorstep. Inside will be your individual portions of each catch that month, vacuum-sealed and blast frozen. Along with recipe ideas for the fish pertaining to your delivery that month. Plus stories about the company and the actual fisherman that catch the seafood.

Greek Salad with Air Fryer Salmon Recipe
This recipe comes together quickly with a few simple steps.
- Quickly marinade your salmon filet with a little extra virgin olive oil, dried basil and dried oregano
- While the salmon is cooking, mix together the Greek Salad in a small bowl
- Then simply build your salad layer by layer. You can toss everything together or leave it a bit deconstructed, whichever you prefer
- Leave the extra dressing on the side and everyone can add more according to their preferences
Greek Salad with Air Fryer Salmon
Equipment
- Air Fryer
Ingredients
For the Salmon
- 6-8 oz Salmon filet(s) We use Wild Alaskan Salmon from Sitka Salmon Shares
- 1 tbsp extra virgin olive oil
- 1 tbsp dried basil
- 1 tbsp dried oregano
For the Greek Salad
- 1 medium cucumber, diced
- 1/2 cup cherry tomatoes, sliced in half
- 1/4 cup red onion, diced
- 1/4 cup feta cheese, crumbled (divided, save 2 tbsp for end of recipe)
- 2 tbsp kalamata olives, sliced
- 1/4 cup vinaigrette (see notes section for recipe or store bought okay as well) Save a bit for the end of the recipe
Remaining Ingredients
- 2 cups butter lettuce or lettuce of your choice
- 1 avocado, skin removed and sliced
- 1 lemon (sliced and leave end for juicing)
- 1 tbsp fresh dill (optional garnish)
Instructions
- Quickly marinate the salmon in the olive oil, dried basil and dried oregano (about 10 minutes)
- Place salmon in the basket of the air fryer, set temp to 390 degrees and cook for 7-8 minutes.
- While salmon is cooking, combine the diced cucumber, halved cherry tomatoes, diced red onion, kalamata olives and all but 2 tbsp of the crumbled feta in a small bowl.
- Drizzle with half of the vinaigrette, mix well and set aside
- On a large platter or in a serving bowl, place the butter lettuce leaves (you may break into smaller pieces if they are large), top with greek salad, sliced avocado and air fryer salmon
- Sprinkle the reaminign the feta cheese over the salad, squeeze a bit of fresh lemon juice over the top and then garnish with lemon slices and fresh dill
- You can either drizzle the remaining vinaigrette over the top or serve on the side

Frequently Asked Questions
Yes you can! The cooking time will vary slightly depending on how thick you fish filet is cut but in less than 10 minutes (typically), you can cook fish in the air fryer
Fish should reach an internal temperature of 145 degrees F
Of course! Homemade vinaigrette is quick and a good way to ensure you are using fresh ingredients and controlling salt but in a pinch a store bought dressing works well too. Try to look for one that uses olive oil and doesn’t contain a lot of added salt, sugar or preservatives. We love the Primal Kitchen dressings and Tessemae’s dressings.
You could prep parts of this dish in advance to make it easy to serve at a gathering. The greek salad can be made up to a day in advance. You could store the salmon in the fridge once it’s cooled at then just reheat slightly before serving. The avocado I wouldn’t add until just before serving or it will brown. I would also recommend not dressing the salad until right before enjoying it to prevent anything from getting soggy.
Since the Mediterranean diet encompasses the eating patterns of so many different regions, there are no black and white rules just a set of guidelines. This recipe utilizes lots of fresh fruit and veggies – butter lettuce, cucumber, tomato, and red onion as its base. Instead of red meat it features heart healthy salmon. A small amount of cheese is used and this dish is flavored with olive oil based vinaigrette dressing, fresh and dried herbs in place of heavy sauces/dressings. The focus is fresh ingredients with lots of flavor.
