These mini tacos are so full of flavor that they don’t even need any extra dips or toppings. The air fryer makes them perfectly crispy and doesn’t require turning on the oven.

Mini Air Fryer Tacos Recipe

The filling for these air fryer tacos includes ground turkey, taco seasoning, cheese, Desert Pepper Trading Co Salsa, and refried beans.

You can use the taco seasoning of your choice and either corn or flour tortillas. We used flour tortillas because we like them better but it’s your choice, either work.

Also, we used the air fryer for this recipe but you can also pan fry the mini tacos over the stove. Simply heat avocado or olive oil over medium-high heat in a skillet and then cook tacos for about 2 minutes on each side.

Ingredients

  • 1 pound ground turkey
  • 2 tbsp olive oil, divided
  • 3-5 tbsp taco seasoning
  • 1/2 cup shredded cheese
  • 1/2 can refried beans
  • 1/3 cup Desert Pepper Trading Co Cantina Salsa (+ more for serving)
  • 16 mini flour tortillas (can substitute corn in desired)

Instructions

  • Heat 1 tbsp olive oil in large skillet over medium heat. Once warm, add ground turkey and cook until brown and heated through
  • Once cooked, add 1-2 tbsp taco seasoning and 1/3 cup water. Stir to combine and then add 1/2 cup shredded cheese (we used cheddar but you can use whatever you prefer)
  • Remove from heat and allow to cool slightly
  • In small food processor or blender, combine 1/2 can refried beans, Desert Pepper Trading Co Cantina Salsa, and remaining taco seasoning. Pulse to combine. **Note – do not over pulse, you want some consistency to remain and not be fully smooth
  • To assemble the mini tacos, take a small tortilla and place a scoop of the ground turkey mixture and top with a scoop of the bean/salsa mixture. Press together to close (the bean mixture will help hold the tacos closed).
  • Place the filled tacos in the air fryer and lightly brush tops with remaining olive oil. Air fry for 6 minutes or until golden brown and crispy. You may have to cook in batches, depending on the size of your air fryer.
