Recipe Inspiration

I love looking for and trying new recipes. That includes ones I find online (hello pinterest), in magazines, and on tv.

I think one of the biggest compliments you can give someone is when you recommend their recipe. Consider this my compliment to each of these wonderful recipe creators.

Some of the favorite things I’ve made while staying at home

I’m not a baker by any means but one good thing that has happened during this time at home is that I’m trying new things. That has included a bit of baking.

Baked Goods

I used sprouted wheat flour because I didn’t have any all purpose but it came out great!

I tried this Homemade Artisan Bread Recipe from Sally’s Baking Addiction and it was so good! Came out perfectly and the family devoured it. She even has a video showing all the steps.

I also made a batch of these Classic Dinner Rolls from All Recipes and they are awesome! So fluffy and buttery…delicious! I’ve tried a few other dinner roll recipes that didn’t turn out so well, so this one if a keeper.

And baking wouldn’t be complete without a sweet treat. I’ve tried homemade brownies before and always thought the box mix came out better. That was until I tried making these amazing Crinkle Top Brownies from Half Baked Harvest. They are everything I love in a brownie – fudgey, thick, dense and not at all like a cake.

Instant Pot Meals

I’ve been using my instant pot a ton lately! There have been some major hits and a few major misses but that’s what cooking is all about.

Some of my favorites have included the following –

We had this Golden Instant Pot Chicken and Rice from Well Plated by Erin last night for dinner. It was delicious! Everything gets cooked all together in the instant pot so it’s a one stop shop. Even the kids loved it, spices and all.

If you love tortilla soup, then I highly recommend this Instant Pot Chicken Avocado Soup from KISS in the kitchen. My husband says this is the best soup he’s ever eaten. It’s so good and easy to put together. Plus leftovers are the best!

I love artichokes and found huge ones at the store recently for a great price! I have tried making them in the pressure cooker multiple times and this Instant Pot Artichoke Recipe by Jessica Gavin is the best one I’ve found. They come out so tender and lightly flavored with lemon, garlic and rosemary.

Side Dishes

My husband bought 75 pounds of rice when the whole “shelter in place” started going down. We typically don’t eat a ton of rice, so I’ve been trying tons of new recipes.

This Restaurant Style Spanish Rice recipe fro Lil’ Luna is my favorite for taco nights. So easy to make and tastes just like restaurant style rice. The kids love it, we love it, everyone loves it.

During the week, I’ve been loving this Lentil Salad with Cucumber by Downshiftology. It’s simple but filling and not complicated…my kinda dish! Plus it makes great leftovers so you can enjoy multiple times.
