Ingredients

  • 1/2 medium watermelon, cubed (about 4 cups)
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp black pepper
  • 1 tbsp basil, chopped

Instructions

  • Place the cubed watermelon in a large bowl
  • Sprinkle with feta cheese, drizzle with olive oil, add black pepper nad top with chopped basil
  • Mix to combine and enjoy!

Frequently Asked Questions

Do I have to use feta cheese?

I’ve only ever tested this recipe with feta cheese but I think it would work just as well with goat cheese or fresh mozzarella as well. If using another type of cheese you may need to add a pinch of salt

Can I make this salad in advance?

I would hold off on adding the olive oil until just before serving but otherwise, yes you could prepare in advance and just dress with oil right before serving.

What other herbs could you use?

If you don’t want to add fresh basil, you could also substitute with fresh mint
