We are officially in back to school mode over here, which is relatively new to us.
Both of my kids started preschool last week. And of course they both go to school on different days and completely different times. Between school days, class volunteering, play dates and my husband’s travel schedule, my weekly calendar is beginning to look a bit crazy.

On those hectic days, dinner is usually the time of day that I start to really get frazzled and stressed. I often feel like I have zero time to prepare anything, and it’s the time of day when my kids get antsy and want all my attention.

I used the Smithfield Marinated Fresh Roasted Garlic & Herb Pork Loin Filet to create this easy and delicious Roasted Pork with Honeycrisp Apples dinner that is ready in under 30 minutes.
Yep, you read that right. Ready in under 30 minutes!
The pork is 100% fresh and is pre-marinated in a flavorful blend of garlic and herbs, without any artificial ingredients. It’s perfectly seasoned, meaning you don’t have to deal with measuring any spices yourself. Time savor! I simply removed the pork from the package, seared it on both sides in a hot skillet and then placed it in the oven to roast. So simple.
Perfect for weeknight dinner!
While the pork was roasting, I sliced up some honeycrisp apples (my absolute favorite!) and red onion which I sautéed in a pan over low heat. With the exception of a quick, occasional stir to the apples & onions, this dinner cooks itself! The simplicity and easiness of this dinner makes it a perfect choice for any night of the week.
When I typically cook dinner, I’m scrambling around the kitchen chopping, stirring or measuring until everything is ready. This leaves me exhausted and grouchy by the time we actually sit down to eat. Since this dinner is so simple, I found myself with some free time once everything was cooking. I was able to actually sit down, with a glass of wine, and help my daughter practice her reading. It took the pressure off of dinnertime and actually created a fun, relaxing atmosphere for the evening.
This has become one of our new family favorite dinners, especially during the weeknights since it’s so easy. I can’t wait to try the other flavors and cuts available!

Garlic and Herb Roasted Pork with Honeycrisp Apples
Ingredients
- Smithfield Marinated Fresh Roasted Garlic & Herb Pork Loin Filet
- 3 Tbsp Olive Oil divided
- 1 tbsp butter
- 2 medium honeycrisp apples cored and sliced (any apple flavor will be great!)
- 1 small red onion peeled and thinly sliced
- 3 sprigs fresh thyme
Instructions
- Preheat oven to 425 degrees
- Line a roasting pan with foil, set aside
- Heat 2 tbsp olive oil in large skillet/pan over medium-high heat on stove
- Remove pork filet from package and sear in skillet/pan for 2 minutes on each side
- Place seared pork filet in roasting pan and place in oven for 20-25 minutes
- In same skillet, melt butter and remaining 1 tbsp olive oil over low heat on stove
- Add sliced apples and onions to pan and sauté for 20 min, until tender and golden brown (stir occasionally)
- Let pork filet rest for 5 minutes before slicing
- Serve the pork on top of the apples and onions
