Adding More Vegetables to Meals

If you are new here (welcome!) then you’ll learn right away that one of our #1 goals is to help people add more veggies to their meals.

Following a Mediterranean diet means that you are already focused on adding more plant based dishes to your meals. A diet that’s high in vegetables can really help add more dietary fiber, vitamins, minerals that have a whole host of health benefits. Adding more plants can decrease cholesterol, improve heart health and offer increased protection from developing certain cancers.

Check out What Does Eating Plant Based Diet Even Mean for great background info and tips on adding more fruits, veggies, whole grains, nuts and seeds to your meals.

Speaking of fiber, less than 10% of people don’t reach their daily recommended amount! Fiber is so important for good bowel health, cholesterol, blood sugars, and heart health. Roasting Vegetables

One of our favorite ways to cook vegetables is to roast them. Roasting brings out such an amazing flavor. It’s also a great way to incorporate spices for different flavor profiles. Not to mention the facts that often you can just cook all the veggies on a single pan.

We love this handy post on How To Roast Any Vegetable from The Kitchn. Great tips for seasonings, time required for roasting different veggies, etc.

Fall Inspired Greek Roasted Vegetables Recipe

This Fall Inspired Greek Roasted Vegetable recipe uses some of our favorite fall flavors like eggplant and sweet potato. It’s hearty and seasoned simply with garlic and herbs. Feel free to change up the veggies and seasonings according to your preferences or based on what you have on hand.

Our #1 tip for roasting veggies is to make sure you have enough room on your pan! If needed, use two pans to really make sure all the veggies have enough space and aren’t piled on top of each other.
