We’ve been trying to have Meatless Mondays each week on/off for the past 2 years! It doesn’t always happen and we aren’t sticklers for it, but it has really helped me find some delicious vegetarian recipes.

Sharing some of my Favorite Meatless Monday Recipes that we eat quite often at my house. Some are recipes from this blog and some are ones that we’ve had multiple times from fellow bloggers.
Favorite Summer Meatless Monday Recipes
The way I measure the success of a recipe –
- If I enjoyed it
- Would I make it again
- Did Dan like it and not complain that we didn’t have any meat
In all fairness, Dan (my husband) will literally eat anything you put in front of him. He isn’t picky nor does he complain about food very often. However, if you ask him what he wants for dinner he will always say “steak”.
These are all Dan approved recipes.
Baked Eggplant Parmesan
The is one of the first recipes I made when we started Meatless Mondays and I probably make it at least once of month.
I typically serve it with a big, veggie packed salad. It goes great with this Greek Salad recipe.
Ricotta Toast w/ Tomato & Basil
The quintessential summer recipe in my mind. Serve with grilled veggies drizzled in olive oil and fresh herbs or a 3 Bean Salad for a delicious meal.
Greek Farro Salad with Fresh Herbs
Farro has just a great, nutty flavor and is very filling. This dish has so many great ingredients packed into one, delicious bowl. To make it even more filling, I would add some sunflower seeds and pistachios for extra crunch.
Greek Orzo Stuffed Peppers
I cannot get enough of this amazing recipe from Half Baked Harvest. It’s bright, fresh and filling!
Do not skip the Lemon Basil Tomato topping…delicious!
Sriracha Peanut Naan Pizza
This amazing recipe from Sara Haas, RDN is a family favorite! Make extra because it goes fast.
Lentil Salad with Cucumber
This lentil salad from Downshiftology is one of my favorite to meal prep for delicious, healthy lunches all week long. The sweetness of the dates, combined with the fresh veggies and light dressing are so tasty.
Vegetarian Frittata
A frittata with all kinds of vegetables is one of my favorite, simple ways to enjoy meatless monday.
Paired with a leafy green salad, this is a filling but easy dinner.
Spicy Sesame Zoodles with Crispy Tofu
I’m usually not a huge fan of tofu but this recipe has it cooked in a spicy peanut butter sauce that makes it so delicious and a little bit crunchy! Definitely a lunch favorite of mine.
