Easy Weeknight Meals

Finding a few, reliable, easy to pull together weeknight meals are my never ending quest in life. The meals have to be simple, just a handful of ingredients and family friendly. Bonus points for things that cook in a single dish.

Some of our generic go to’s include – tacos, breakfast style dinner, and spaghetti with meatballs. I wanted to find something a bit lighter and more Mediterranean Diet inspired to add to the list.

Air Fryer Recipes

A friend recently asked if the air fryer was really worth all the hype. My recommendation is YES! It’s so easy for snacks type foods like chicken nuggets, mozzarella sticks, corn dogs, and French fries. However, it’s also fantastic for roasting veggies like asparagus, broccoli, and carrots. These Perfectly Crisply Air Fryer Brussels Sprouts are on repeat at my house. My short term goal is to perfect a chicken recipe in the air fryer as well.

Since it’s a goal of ours to include at least 2 Servings of Seafood a week into our meals, it seemed only natural to create a salmon recipe for the air fryer.

This Air Fryer Salmon recipe checks all the boxes for our house –

Once you marinade the salmon with the easy dressing, it simply cooks for a few minutes in the air fryer and you are done. We listed some serving suggestions underneath the recipe but it would pair well with almost anything.

The Easiest Air Fryer Salmon

Equipment

  • Air Fryer

Ingredients

  • 3 tbsp orange juice
  • 3 tbsp soy sauce
  • 1 clove garlic, minced
  • 1 tbsp sriracha can omit if don't want a little spice
  • Garnish – sesame seeds, scallions
  • 6-8 ounces Salmon

Instructions

  • In a small bowl or jar,combine the orange juice, soy sauce, minced garlic and sriracha. Mix well to combine
  • Place salmon in a sealable bag or large dish. Pour marinade over salmon, cover allow to marinade for 20 minutes
  • Once ready, place salmon in the air fryer. Press air fry button, set to 390 degrees and set time for 7 minutes.
  • Check if salmon is done by using a fork to lightly pull off a piece from the top. If salmon lightly flakes off with fork, it's done. Top with optional sesame seed and sliced scallions if desired.

This is a great meal that would go well with so many dishes. Some of our favorite suggestions include –

  • Wild Rice and Cucumber Salad (simply slice cucumber and scallions and add a little soy sauce, rice wine vinegar and sesame seeds)
  • On top of a big, green leafy salad
  • Alongside these Oven Baked Sweet Potatoes

Frequently Asked Questions about Cooking Salmon

Can I Make this recipe without an Air Fryer?

Yes, absolutely. The cooking times will vary though depending on your cooking method of choice. We would recommend baking in oven at 400 degrees F for about 10 minutes (always check temp to ensure fish is cooked to 145 degrees)

Should I be worried about Mercury levels in Salmon?

Can I substitute a different kind of hot sauce?

You bet! We like sriracha because we don’t find it too spicy but you can feel free to add your favorite hot sauce or skip the heat all together too
