Friday Favorite

If you ever need to get me a gift – a cookbook is the way to my heart. Sure the internet and pinterest are great resources for recipes but I love the stories and pictures in a cookbook.

I recently received a gifted copy of The MIND Diet Plan & Cookbook written by the fabulous Julie Andrews, Registered Dietitian and trained Chef.

I read it cover to cover and love it!

The MIND Diet

MIND stands for Mediterranean DASH Intervention for Neurodegenerative Delay.

Basically it’s a combination of the Mediterranean Diet and DASH Diet (dietary approach to stop hypertension) designed to help prevent Alzheimer’s and Dementia.

The focus of the MIND diet is incorporating potassium and fiber rich fruits and vegetables, nuts, seeds, whole grains, and omega 3 rich seafood into everyday meals while limiting sodium and saturated fat.

I love that the focus is on incorporating these brain boosting foods into your diet instead of excluding certain foods.

The MIND Diet Plan & Cookbook

I honestly, truly love this book.

Easy to Understand

It has just enough science to explain the connection between this way of eating and cognition. There is nothing worse than trying to read something scientific and having to re-read the same sentence 100 times before you just give up trying to understand.

Julie does the hard work for you and gives you a beautifully laid out, easy to follow 28d day MIND diet meal plan. Complete with tips for meal prep and grocery lists.

Delicious Recipes

Probably one of my favorite parts of this cookbook are the recipes! I have seriously bookmarked almost every page of the recipes to try.

They are all so flavor packed but still easy enough for everyday meals. I also love that they don’t call for exotic ingredients that you have to try and track down. Plus most of the recipes require 30 minutes or less of cooking time…a huge plus in my home.

Some of the favorites that I have tried (and loved) so far include –

  • White Bean and Mushroom Toast (pictured above)
  • Crispy Baked Artichoke Hearts
  • Turkey Sausage and Kale Baked Ziti

All three of the above recipes have been easy to cook and taste amazing!
