Our Mediterranean Diet Meal Plan

How We Meal Plan

We go more in depth on how we go about planning meals in this post – Meal Planning Guide but just to quickly summarize –

  • Breakfast is usually pretty standard in our house so I don’t include it on our meal plan list
  • My kids either bring a bagged lunch or buy hot lunch at school so I only meal plan for my lunch (and my husband if he is working from home that day)
  • I include notes on some days to indicate if the meal is something we have to make quickly, on the go, etc. This really helps when it comes to planning meals and buying food to know our schedule in advance.
  • On Saturdays we typically eat leftovers and eat out for lunch or dinner. I indicate that on the meal plan each week but just in case you were wondering

What We Ate This Week

Sunday

This was Superbowl Sunday, so our schedule for meals was a bit off. We enjoyed some snacks during the game and then continued those snacks into our dinner.

These are the snacks that we made (both for the watch party we attended and then at home after the first half for dinner) –

What We’ve Been Loving Lately

This week we became re-obsessed with Bitchin’ Sauce, especially the chipotle flavor. If you aren’t familiar, it’s a sauce/dip/spread found at many chain grocery stores (by the refrigerated hummus) that is made from almonds and is gluten free and vegan as well. It is a great flavor and we put it on everything from sandwiches, crackers, tacos, etc.

While trying to figure out some ongoing dietary issues, I made an attempt to reduce dairy in my diet (no eliminate by any means, just scale back a bit) so I tried out this Kite Hill Chive Flavored Cream Cheese Alternative. It’s delicoius! The texture and flavor is so similar to regular cream cheese that my husband couldn’t even tell the difference.
