Mediterranean Diet Menu Inspiration

Every week, we share our family’s meal plan…what we ate and what we loved. Our goal is simply to show menu ideas and share recipe links for inspiration. Everyone’s needs, budgets, cooking styles are different so just remember what works for us isn’t always going to work for anyone else.

Sometimes are meals are simple (Wednesdays are a busy day for us so it’s usually a quick meal). Other times we have a bit more time to prep meals. We simply want to share our actual, realistic menu with anyone looking for examples.

At the end of the post we share a few things that we’ve been loving lately. It can be a recipe we have been making on repeat, a product we love or anything in between.

What We Ate this Week

We go into more depth about our meal planning style here but is short summary – breakfast is typically the same so I don’t include it on the meal plan. The kids eat lunch at school so I only include mine (and my husband’s if he’s working from home) on the list. One night a week we typically eat out or order take out, so I am missing one dinner.

When I list “leftovers” (typically on Thursday night), it is to clean out the fridge before I go grocery shopping the next day. I literally pull all the leftovers, fruit, and veggies out the fridge. The kids can kind of select what they want to eat and then we can add in frozen/pantry items if needed for filler/balance.

As I type this week’s menus up, I am noticing we ate a lot of sandwiches (it was a hectic week!) and had red meat twice. Which we normally don’t do. But that’s a great example that some weeks are going to be better than others. Life is all about balance.

Sunday

LunchVegetarian Frittata , kids had scrambled eggs and toast

Monday

Tuesday

LunchGreen Vegetable Sandwich with Hummus

Dinner – Stir Fry with Spicy Peanut Sauce, White Rice and Tofu, inspired by a cook along I did with Kelly Jones Nutrition about using what’s in your fridge/freezer/pantry to build quick meals. I used a bag of stir fry veggies from Trader Joes and it was so quick and easy.

Wednesday

(kids have gymnastics at night so dinner has to be quick once we get home to fit in showers, dinner and bedtime routines)

Lunch – leftover stir fry from previous day, along with cottage cheese and blueberries

Dinner – Sandwiches (dan and I had salami, cheese, micro greens, avocado, and sauerkraut. kids had salami and cheese with sliced tomatoes), fruit, bagged salad

Thursday

LunchLentil Bolognese (from a cook along webinar I was invited to participate in). It was really good and easy.

Dinner – leftovers…I honestly pull everything out of the fridge and everyone can create their own meals and then supplement any freezer/pantry staples to balance it out

Friday

Lunch – hubby and I went on a last minute day date. I had a Cobb Salad and Curry Cauliflower & Leek Soup from a local restaurant. I always ask for the dressing on the side because it always comes drowning in dressing!

Dinner – Rib Eye, Baked Potato, Parmesan Crispy Brussels Sprouts (in the air fryer)

Saturday

Lunch – honestly lunch was just a cluster of random things. Crackers with leftover tzatziki, leftover lunch meat with sauerkraut on the side, pickles, apples dipped in peanut butter and cottage cheese.

Dinner – we had friends spontaneously come over for dinner, so we ended up having Tri Tip, Mac & Cheese from Panera, Za’atar Salad (from Trader Joes) and Garlic & Sesame Edamame (so easy and quick, perfect for last minute meals)

Things We are Loving

This is the section where we simply share a few things we have been loving lately. It can be a recipe that we make often, a product that is new to us or anything in between.

Mavuno Harvest, Organic Dried Pineapple

If you love pineapple this is an amazing product. It is so juicy and fresh tasting, especially for a dried fruit. Plus, the only ingredient is…pineapple!

We purchase ours from Thrive Market, but it’s available directly from their website and at many other places like Walmart and Amazon.

We recently shared our Homemade Hummus Recipe but we also talk about how sometimes you just need to quickly purchase it from the store and call it a day. We have been loving Hope Hummus for awhile now, especially on sandwiches.
