These little almond butter and honey bites are a simple recipe that comes together in minutes. I like keeping them in my fridge/freezer for a quick little bite of creamy, slightly sweet goodness.
Searching for a Good Almond Butter
I shared recently on my Instagram that I was looking for almond butter at the store. I started reading the ingredient labels to find one that had the least amount of ingredients added.
Many of the ones I typically would have chosen contained either palm oil, salt, sugar, or canola oil. Not what I wanted in my almond butter.
I finally found this one from Base Culture that contained…just roasted almonds. Nothing else added. It was a bit more expensive than my usual almond butter, but it was on sale.
I’m also adding almond butter to my list of things to try making at home.
Just a Touch of Honey
I used some samples I received of Nature Nate’s Honey to lightly sweeten these almond butter bites. It’s 100% pure raw and unfiltered honey. If you prefer sweeter treats, you may need to add a bit more honey to the recipe.
A few tips for this recipe –
- I like to grind the rolled oats in a food processor to make these bites a bit smoother. If you don’t mind the chunky texture, you can leave them whole
- I used almond butter but you can easily substitute peanut butter, cashew butter, sunflower butter, etc.
- The recipe rolls these in coconut flakes, which I also ground up in the food processor. You could also roll them in cocoa powder or add mini chocolate chips.
Almond Butter and Honey Bites
Ingredients
- 1/4 cup rolled oats
- 1/2 cup almond butter
- 2 tbsp honey
- 1/4 cup shredded coconut, unsweetened
Instructions
- Place the shredded coconut in In a small, shallow bowl
- In a food processor, grind the rolled oats into a finer consistency
- In a medium bowl, combine the ground oats, almond butter, and honey. Mix well to combine
- Using a small scoop or spoon, roll about a tablespoon of the mixture into a ball and then roll the ball into the bowl of shredded coconut
- Place on a parchment covered plate and set in the fridge to set
- Store in the fridge or freezer
