Sharing one of my favorite dinner recipes from our first Mediterranean diet cookbook, The Mediterranean Diet Made Easy. This One-Pan Lemon & Artichoke Baked Chicken is the perfect meal when you want a relaxed, delicious, homemade made that doesn’t take a lot of effort to bring to the table.

One-Pan Lemon & Artichoke Baked Chicken

This easy, delicious dinner is one of my personal favorites from the book. It’s hearty, budget friendly, works for families or those cooking just for themselves, and all cooks in a single pan.

This dish reminds me of cozy dinners on evenings when it’s raining outside. The lemon smells so good while cooking. I also love all the juices that stew in the pan while it’s in the oven. Don’t be afraid to grab some crusty bread to dip into that pan sauce.

Cooking tip – I keep the olives whole and half the artichoke hearts because 1) they cook better that way in this dish (too small and they’d cook quicker than the chicken) and 2) my little picky eaters (i.e. kids) can easily pick them out if they don’t want them but still enjoy the chicken.

One-Pan Lemon and Artichoke Baked Chicken

A relaxed, delicious, homemade, family friendly meal. Tender chicken, salty olives, bright lemon and creamy artichoke hearts are all cooked together in a single pan for a flavorful, hearty meal.

Ingredients

  • 1 lb Chicken Thighs, boneless
  • 2 tbsp Olive Oil divided
  • 3 tbsp Greek Seasoning Spice Blend divided
  • 1 can Artichoke Hearts cut in half
  • 1 Lemon sliced
  • 1/3 cup Olives

Instructions

  • Marinate the chicken thighs in a reasalable bag or glass dish with 1 tbsp of Olive Oil and 2 tbsp of Greek Seasoning for at least 30 minutes.
  • Preheat the oven to 350 degrees F
  • Place chicken in an ovenproof baking dish/skillet. Add the artichoke hearts, lemon and olives around the chicken.
  • Sprinke with the remaining tablespoon of Greek Seasoning over the entre top of hte dish
  • Cover with foil and bake for 12 minutes. Remove hte foil and then bake for an additional 10-12 minutes, or until chicken is cooked through and golden brown.
