While we are typically summer people through and through, there is something beautiful about Fall. Plus the beauty of October Seasonal Produce is here for all of us to enjoy.

Apples
A top fall favorite! Plus the old An Apple a Day saying is true…apples are a crisp and naturally sweet fruit that also boast many health benefits.

Eggplant
It took us awhile to experiment cooking with eggplant. It just seemed so intimidating but now it’s one of our favorite ways to add heartiness and texture to plant based meals.
Mushrooms
A flavorful fall fungi! Mushrooms are especially great when trying to incorporate more Plant Based Meals into your diet because they have a texture that is similar to meat.
Spinach
We are huge fans of spinach, so much so that we wrote this 5 Ways to Enjoy Spinach post years ago.
Fun fact – to be able to better absorb the plant based iron found in spinach be sure to serve it with a little vitamin c. This can be drinking some lemon water with a spinach containing meal, drizzling a little fresh lemon or orange right on your spinach, adding tomato to a spinach dish, etc.

Squash
