The kitchen section at Home Goods is my happy place. I just love wandering the aisles and looking at all the very specific kitchen gadgets.
I mean who wouldn’t want a set of plates designated specifically for fresh crab with a cute little red cartoon crustacean and a snappy caption like “let’s get cracking”?
Unfortunately my kitchen isn’t that big and my husband isn’t on board with my desire to have every kitchen gadget ever made. I’ve had to try and keep my kitchen tools collection to those I really use and need.

Cast Iron Skillet
I use my cast iron skillet all. the. time. It’s the best for searing steak, caramelizing veggies, or even making cinnamon rolls. Don’t even get me started on how delicious breakfast is with these Breakfast Potatoes with Crispy Pancetta and Herbs from Wanderspice. The cast iron skillet gets the potatoes so crispy on the outside and soft and buttery in the middle…perfection!
The best part is that it easily goes from stove to oven. No more starting something in a pan on the stove and then transferring to an oven proof dish. One less dish…hallelujah!
Cast Iron Salmon
This Cast Iron Skillet Salmon is a recipe that I make about once a week. It was adapted from this Barefoot Contessa Panko Crusted Salmon recipe with a few changes and personal touches added.
This dish is delicious, easy to make, and heart healthy. If you are looking to add more fish to your meals, this is a great recipe to try.
Tips for Making this Cast Iron Salmon
One of my favorite parts of this recipe is that it all cooks in a single pan. It starts on the stove and then gets finished in the oven.
If you choose to use skin-on salmon (I do!) follow these tips to get the skin extra crispy –
- Ensure the oil and the skillet are hot before adding the salmon
- Once the salmon is added, skin side down, don’t move or touch it while it cooks
Cast Iron Skillet Salmon
Ingredients
Panko Crust Topping
- 1/2 cup panko style breadcrumbs
- 1 tsp garlic powder
- 1/2 tsp dried basil
- 1/2 tsp dried parsley
- 1 tbsp olive oil
- salt and pepper to taste
For The Salmon
- 6-8 oz salmon fillet
- 1-2 tbsp dijon mustard
- 1 tsp lemon zest
- 1 tbsp olive oil
- 3-4 lemon slices
Instructions
- Preheat oven to 425 degrees F
- Place the panko, garlic, basil, and parsley in a small bowl
- Add 1 tbsp olive oil and mix until well combined, season with salt and pepper to taste. Set aside
- Place the salmon (skin/bottom side down) on a cutting board or piece of parchment paper.
- Spread dijon mustard all over top side of salmon
- Add lemon zest directly on top of mustard
- Press panko mixture directly on top of mustard layer and press slightly so it sticks to the mustard
- In a large skillet, heat remaining olive oil over medium-high heat
- Place salmon (mustard/panko side up) in skillet and let sear for 4-5 minutes without moving
- Top salmon with lemon slices and move entire skillet to oven to bake
- Cook for additional 6 minutes, until salmon cooked thru and panko crust is golden brown
- Remove from oven and allow to rest for 5 minutes before serving
Notes
A Great Addition to a Mediterranean Diet
Including fresh seafood at least 2 times a week is a good goal for incorporating a more mediterranean style diet into your life.

- Omega 3’s are essential fatty acids. This means we need to get them from food since our bodies can’t make them
- Omega 3’s are believed to help decrease inflammation, lower blood pressure, and reduce the risk of certain cancers
